Why do some keyboards use the cable with a military connector?
Couldn't they use a simple USB cable like a mouse?

Yes they can use a simple USB cable, I do that with my custom keyboard. Both of your example images show premium cables sold to go with custom keyboards and people buy them just because they want them. I would expect there to be no reasonable function for the "military connector" if the keyboard itself has a removable USB-C or Micro-B connection.– RomenMar 6 at 18:57
